Risotto di gò alla Buranella

A risotto with a disappearing act: the gò, a small lagoon fish, is simmered into the broth and never reaches the plate. Ruggero calls it the signature, and we'd have one pot for the whole table first.

Ruggero Bovo has run this Burano trattoria for decades with the family: Lucia digs out the old island recipes, and their son Massimiliano minds the wine. Fish comes from the lagoon and the Adriatic, and the pasta and desserts are made in the house.
