Mahir opened this Osmanbey cookhouse in December 2015, the first of two; it bakes thin lahmacun, flatbread under mince, and pide, the boat-shaped bread, in the oven and grills kebabs. It's south-eastern Turkey's table in a busy Istanbul street.
