Where it comes fromIstanbul's own

Its name means the bottom of the cauldron. In Beylerbeyi an Albanian pudding maker's kazandibi was famous in the late 1800s, until his son Nazif Ağa died, between 1935 and 1940, and the shop closed.

Fıstıklı muhallebi

Milk pudding with pistachio

Istanbul's own

Pudding making was a trade of its own in the Ottoman city, carried on by the muhallebici. Under Abdülhamid II, Marko, an Albanian Christian, kept the Ahmediye pudding shop in Üsküdar and sent sealed trays of pudding to the palace.

With real pistachio pieces, one of the three the house says are asked for most.
